I Solai (often known as I Solai di San Giorgio) is an artisanal Italian vinegar producer based in Ganaceto near Modena, founded by the Cozzola and Fiorini families. The name "solai" refers to the traditional attics ("solai") where barrels of balsamic vinegar are stored and aged naturally.
